The bakery, which opened May 2, also serves up muffins, cakes and, according to one Facebook post, "to die for" monkey bread.

In addition, you'll find breakfast pastries, pies, cookies, a full-service coffee bar and many other delectables made from a variety of organic and local ingredients as well as sandwiches on freshly baked brioche and focaccia.

The shop, owned by Pam Graham, specializes in French pastries, American cakes and pies. Graham said what makes her bakery unique is that she uses organic ingredients when she can -- and fresh ingredients.

"We really care about what goes into our pastries," she said. "We don't just throw sugar in. Sugar is an ingredient, not a flavor."

In addition, she said, there's something for everyone, whether you're gluten-free or nut-free. A  must-try for coffee lovers, the new nutella latte made with housemade nutella.

The Pastry Hideaway is at 126 Old Ridgefield Rd., (203) 762-6600.
